I'm searching the internet for good breakfast recipes. The kids get tired of the basic French toast, pancakes, sausages, etc. I have found a few good breakfast casserole recipes but would gladly welcome any tried and tested recipes that my blog readers have for a good breakfast. Casseroles, baked goods, pancake/waffle variations, egg or meat dishes - all are welcome!
Keep in mind:
1. We can get bacon, ground sausage and ground beef, sausage links and ham. We can only afford to serve meat once a week on our budget so this meal is appreciated.
2. Cheese is commodity we have to ration. We can't get cheddar - mozzarella in slices and the block are our best buy. Swiss is definitely way too expensive to use. Cottage and ricotta cheese are out as well.
3. We are feeding 15 people - 7 guys and 8 girls.
4. Eggs and bread are really cheap to use. Milk is moderately cheap but we don't serve it as a drink.
5. We have three Asian students plus five others who grew up in Cambodia. They prefer savoury to sweet whereas our North American taste buds are used to jams, syrups, etc.

Shauna, you're wonderful! I don't know that I have any recipes for you but I know how resourceful you are and how you can go through the refrigerator and come up with the most delicious meal. You have amazed me more than once. I hope your dorm kids know how lucky they are to have you!
I have a few good recipes, I'll send you. You have done well to have feed 15 people,up until now.

I don't know if this is the sort of thing that you are looking for. It comes from the most recent Sask 4-H cookbook.
Boiled Omelet in a Bag
In a plastic zipper sanwich bag combine 1Tbsp of your choice:
-sliced mushrooms
-chopped green onions
-chopped red/green peppers
-diced ham
-shredded cheddar cheese
-shredded mozzaella cheese
Season to taste with salt and pepper. Crack two eggs into the plastic bag, removing air. Seal bag. Gently work bag with fingers to combine contents. Boil 15 minutes in a large pot of boiling water. Great for family or other large gatherings. Everyone can make his or her own omelet. Easy clean up. A permanent marker works to label each bag for ID in the pot.

Hi there - just noticed that someone put the camp scramble on the blog. We used to do this all the time at Camp and the kids loved it. Birds in a nest are great as well...do you have that recipe!! Let me know...I am off to Saskatoon again tomorrow which is Tues....Darren's Dad passed away and the funeral is on Wed. at Grace United Church just off Broadway. I was up to Saskatoon with the boys on the weekend...so rather hectic right...will post more later...love all the photos and enjoying all the fun you are having.
